Brewing a hefeweisen this weekend. These are great summer beers. The key to brewing these is in the yeast. Here are a few examples of some good yeasts to use: White Labs Hefeweizen Ale Yeast WLP300 Basic Hefeweizen yeast, moderate phenol and ester White Labs Hefeweizen IV Yeast WLP380 More Clove and phenol, less banana than WLP300.
